BRAIN BOOSTING BLACK BEAN & QUINOA BOWL

It’s topped with hearty, fibre-rich black beans and vibrant, spicy salsa for a delicious combination of flavour, colours and textures in every bite.
Time: 20 mins cooking time, 10 mins to prepare
Serves: 2x people

Ingredients:
- 1 ½ cups canned black beans, rinsed (You can swap the black beans for pinto beans or chickpeas if you prefer)
- 1 ⅓ cups cooked quinoa (you can or replace the quinoa with another grain of your choice)
- ½ cup hummus
- 2 tablespoons lime juice
- ½ medium avocado, diced
- 6 tablespoons Mexican salsa (see below if you want to make your own)
- 4 tablespoons chopped fresh coriander
Preparation:
- Cook the quinoa
- Drain the canned beans and add to bowl with the quinoa
- In a separate bowl, mix the hummus and lime juice together. Thin with water to desired consistency.
- Drizzle the hummus dressing over the beans and quinoa.
- Top with avocado, Mexican salsa and chopped fresh coriander
Note: You can assemble these bowls a day in advance leaving the dressing on the side. To prevent the avocado from browning, toss it with some lime juice after dicing.
Mexican Salsa Recipe: Mexican salsa is made from chopped raw ingredients including tomatoes, onion, fresh coriander, jalapeño or chilli, lime juice and salt. You may also like to add corn.
