AVOCADO, TUNA & WHITE BEAN SMASH

Great as a quick, easy lunch or anytime brain snack, this versatile meal can be served on toast or in lettuce cups. The tuna is high in omega-3s, beans give fibre and protein, and avocado brings a good dose of healthy fats.

Time:  Under 10 mins to prepare

Serves: 1 person

 

Ingredients:

  • ½ avocado (soft)
  • ½ can tuna in olive oil, drained
  • ½ cup white beans (like cannellini), rinsed and drained
  • Lemon juice, salt & pepper
  • Optional: herbs like parsley or dill

Preparation:

  1. Mash avocado, tuna and white beans together
  2. Add a drizzle of lemon juice, salt and pepper (to taste)
  3. Add a sprinkle of herbs to top (optional)
  4. Serve on wholegrain toast, rice cakes, or in crisp lettuce leaves
