This simple winter recipe is a feast for the senses. As the citrus roasts, it releases a beautiful aroma and becomes naturally sweeter, creating a delicious contrast with the creamy yoghurt and crunchy nuts or seeds.
It’s the perfect opportunity to slow down, savour each bite and practice mindful eating.
Time: Prep – 10 mins, Cooking – 20 mins
Serves: 4 people
Ingredients:
- 2 oranges
- 2 grapefruit (or mandarins if you prefer)
- 1 tsp ground cinnamon
- 1 tsp honey or maple syrup (optional)
- 2 cups plain Greek yoghurt
- 2 tbsp pumpkin seeds
- 2 tbsp pistachios or almonds, roughly chopped
- Fresh mint leaves (optional)
Preparation:
- Preheat oven to 180°C.
- Peel and slice the oranges and mandarins into rounds.
- Arrange the citrus slices in a single layer on a lined baking tray.
- Sprinkle with cinnamon and drizzle lightly with honey or maple syrup if using.
- Roast for 15–20 minutes until softened and lightly caramelised around the edges.
- Divide the yoghurt between four bowls.
- Top with the warm roasted citrus.
- Sprinkle over the pumpkin seeds and chopped nuts.
- Garnish with fresh mint if desired and serve immediately.
