TOFU STIR-FRY WITH BROCCOLI & CASHEWS
A simple, brain-friendly meal to support focus and energy. Tofu provides plant-based protein and iron, while broccoli and cashews supply antioxidants and brain-supporting minerals like magnesium and zinc.
Serves 2
Ingredients:
- 1 block firm tofu, cubed
- 2 cup broccoli florets
- 1 red capsicum, sliced
- 1/2 cup cashews (raw or roasted), finely chop or whole
- 2 tbsp soy sauce or tamari
- 2 tsp sesame oil
- 1 cup rice or noodles
- Spring onion to garnish, finely chopped
Preparation:
- Add a small amount of oil to a pan, heat
- Add the Tofu and stir-fry until golden
- Add all the vegetables to the pan along with the soy sauce (or Tamari) and sesame oil
- Cook until vegetables are crisp-tender
- Serve over cooked rice or your favourite noodles.
- Garnish with spring onion
