TOFU STIR-FRY WITH BROCCOLI & CASHEWS 

A simple, brain-friendly meal to support focus and energy. Tofu provides plant-based protein and iron, while broccoli and cashews supply antioxidants and brain-supporting minerals like magnesium and zinc.

 

Serves 2

Ingredients:

  • 1 block firm tofu, cubed
  • 2 cup broccoli florets
  • 1 red capsicum, sliced
  • 1/2 cup cashews (raw or roasted), finely chop or whole
  • 2 tbsp soy sauce or tamari
  • 2 tsp sesame oil
  • 1 cup rice or noodles
  • Spring onion to garnish, finely chopped

Preparation:

  1. Add a small amount of oil to a pan, heat
  2. Add the Tofu and stir-fry until golden
  3. Add all the vegetables to the pan along with the soy sauce (or Tamari) and sesame oil
  4. Cook until vegetables are crisp-tender
  5. Serve over cooked rice or your favourite noodles.
  6. Garnish with spring onion
